Brännland Ember
An apple cider fortified with apple spirit from Tevsjö distillery, made in a glüh-wein tradition boasting 12 % alcohol, 135 grams of residual sugar balanced by 14 grams of acidity. Pure fruitiness, obvious apple notes, citrus, ginger, and a refreshing herbaceous spiciness like lemongrass and verbena notes. One certainly doesn´t lack acidity on the palate, cleansing and invigorating, carrying the sweetness well, relatively fresh rather than sweet on the aftertaste.
2018 Iscider Barrique
Ice cider with 12 months of barrel ageing, 10,5 % alcohol, 142 grams of sugar, and 16 grams of acidity, showing some wood and dry spice notes, followed by rather ripe towards dried apple notes with toffee, caramel, almond, and nutty notes. The palate is rich in sweetness, but once again, a razor-sharp, yet integrated, acidity gives plenty of lift, making it generous and complex, with excellent length.
Spirit
A fortified ice cider boasting 17,5 % alcohol, 240 grams of residual sugar, and 14,5 grams of acidity. One of the reasons for the fortification was the fact that when working only with natural yeasts, the yeast struggled to ferment to higher alcohols and the levels of residual sugar were around 300-400 grams, therefore fortification with apple spirit made from the same cider, paved the way for a lovely and complex style. Excellent purity, showing ripe, yet fresh apple notes, with hints of quince, honey, caramel, candied ginger, and sweet citrus. A rich and warming palate, with layers of caramelized apple flavours, a rigorous acidity, and lift. The alcohol contributes delicate nuttiness and warmth, and decreases the sensation of sweetness, just like in great Port and Madeira.
